Elaboration

Immortalis Albariño is a Spanish white wine produced by Pago de Aylés in the Rias Baixas region and vinified with Albario from 2018.The hand harvest of the plot took place the last week of August, attaining lower yields than the area average. Then, to extract the maximum intensity of aromas and minerality of the terroir, the cold maceration method was used, with fermentation taking place in stainless steel tanks at 15-16 ºC. Finally, the wine is aged for 5 months on lees using manual batonnages.

Taster's notes

Immortalis Albariño 2018 is a Spanish white wine with straw yellow and greenish touches. It has a high intensity of white pulp fruit, such as pear, apple, nectarine, and melon. The white flower notes blend beautifully with the crisp acidity and sweet running intensity of the wine. With a mineral character and a fruity and citric aftertaste, this wine is well-balanced. It goes well with white fish and meats, as well as herbs and leafy greens. It is best served at a temperature between 7ºC and 8ºC.

The Winery

Finca Aylés is located in the northeast of Spain, near the city of Zaragoza, halfway between Madrid and Barcelona. The winemaking project of the Ramón Reula family began in the 1980s and culminated with the reunification of several properties that had belonged to the Finca Aylés since the Middle Ages. At that time it became one of the largest private historical estates in Aragon, with more than 3,200 hectares of land and valuable ecological and scenic conditions. In 2010, the winery was awarded "Vinos de Pago", the highest level of quality that a Spanish winery can achieve.
