Jota de Toro, Crianza 12 months 2018 is an exceptional Spanish red wine originating from the Toro region. It is crafted with utmost care using integral and environmentally friendly agricultural practices. The grapes are sourced from remarkable free-standing vines, aged between 50 to 80 years old. These vines grow in sandy soil with pebbles, resulting in a low yield of 4000 to 4500 kg per hectare. During the harvest, the grapes are hand-picked and carefully placed in 20 kg boxes.
The winemaking process involves traditional techniques, starting with the meticulous selection and destemming of the grapes, followed by a gentle crushing. The grapes then undergo maceration and fermentation in stainless steel tanks. After that, the wine is transferred to French and American oak barrels, where it ages and develops its remarkable flavors. Several debourbages are carried out to ensure its clarity. The wine is clarified using vegetable protein, making it free of allergens. It is mildly stabilized through cold processes, ensuring it doesn't go below 0ºC. The aging period lasts a minimum of 12 months, with 80% of the barrels made of French oak and 20% of American oak, both medium toasted.
The Jota de Toro, Crianza 12 months 2018 is presented in a Burgundy bottle, where it continues to age before it is released to the market. It is packaged in horizontal boxes containing 6 bottles. The label on the bottle celebrates Spanish folklore and showcases the traditional dance, La Jota, which has deep roots in the city of Toro. It is performed during parties, celebrations, Castilian weddings, and special occasions. In addition, the label includes a recipe for a wine-based cocktail, suggesting various ways to enjoy this remarkable Spanish red wine.
Taster's notes
High layer, cherry red with garnet edges. Notes of black fruits, blueberries and prunes, with an expression of ripe grapes, structured with well-integrated notes of toasted wood, such as cocoa and coffee, but retaining freshness. Structured with weight in the mouth, very round, with ripe and fleshy tannins, intense, complex and elegant. Best with hearty meat dishes, roasted or grilled meats, stews, game dishes, cured cheeses and Iberian sausages. Serve this Spanish red wine between 16º to 18º C.
The Winery
Bodegas Díez Gómez, was born from the interests and passions of Óscar and Laura; Óscar an expert in winemaking and Laura an expert in the folklore dance (that´s the reason that on the wine labels there is folklore). This combination, together with a long family history in hospitality and wine, gives shape to Bodegas Díez Gómez. They own 12 hectares of own vineyard, under the seal of quality of the Regulatory Council of the Toro Denomination of Origin and under the influence of the Duero River, producing a limited number of bottles.
