Dom Pérignon Vintage is made exclusively from the best grapes of a single year, reinventing itself by interpreting the unique character of the seasons and daring not to make a Vintage if the vintage does not meet high expectations. After a minimum of eight years of cellar aging, the wine reaches the perfect balance that represents Dom Pérignon, its greatest promise. This is Dom Pérignon Vintage: the fullness of harmony.

Taster´s notes

The nose is full and varied, blending floral with fruit and vegetal with mineral. The bouquet is perceptible, subtly drawing us along a trail of powdery white flowers and apricot nectarine, followed by the freshness of rhubarb and mint and the minerality of ash. White pepper.

On the palate, energy dominates the palate. After a welcoming opening, the wine quickly becomes vibrant and then literally explodes with a surge of effervescence and tonality. Centred by acidic and bitter notes, the finish brings a penetrating tension marked by accents of ginger, tobacco and toast. We recommend pairing it with an appetizer and fish. We suggest a serving temperature of 8ºC

The Winery

Excellent winery that has been attributed the discovery of champagne. The production of champagne, is due to the Benedictine monk Dom Pierre Perignon, born in France in the first half of the 17th century. It is said that this monk, who entered the monastic order at the tender age of nineteen,invented this method of making sparkling wines by pure chance, trying to avoid the formation of bubbles in the wine while caring for an underground wine cellar. This method has been called the traditional Champenoise method.
