Classic Italian Tiramisù

Ingredients
24 ladyfingers
4 large egg yolks
6 grams of sugar
6 dl good espresso or very strong coffee
2 tablespoons and 1 wineglass of sweet wine
1 kgs mascarpone
cacaopowder
Step 1
Mix the coffee with a little bit of sugar and 2 tablespoons of sweet wine
Step 2
Whip together egg yolks and 50 grams of sugar until very pale yellow and about tripled in volume.
Step 3
Stir the mascarpone spoon by spoon into the yolk mixter. Making sure that the mixutre remains airy. Stir into a wine glass of sweet wine.
Step 4
Dip the ladyfingers one by one in the coffee and coat a bottom of 25 cm long cake tin lined with baking paper. Sppon half of the mascarpone mixture on top and sprinkle with some unsweetenend cocoa powder. Repeat this procedure with another layer.
Step 5
Place the mold in the refrigerator for at least 2 hours and turn the tiramisù onto a flat dish shortyly before serving.
