Ingredients

 

16 red shrimp
3 firm peaches
Lemon balm (or mint)
Thyme
Lemon
Extra-virgin olive oil
Salt
Pepper

 

Method

 

Step 1: Prepare the Shrimp

 

1. Place two overlapping sheets of plastic wrap on your work surface.

2. Peel the shrimp and slice along their backs to devein them, opening them like a book.

3. Place the opened shrimp on top of the plastic wrap and cover with another two sheets.

4. Flatten the shrimp very gently with a meat tenderizer. Carefully remove the plastic wrap.

 

Step 2: Slice the Peaches

 

1. Wash the peaches thoroughly.


2. Cut the peaches into thin slices without peeling them.

 

Step 3: Assemble the Dish

 

1. Arrange 4 shrimp on each plate.


2. Add the peach slices and a few lemon slices.


3. Season with extra-virgin olive oil, salt, and pepper.


4. Garnish with fresh thyme and lemon balm.
