Château La Coste is one of Provence's most celebrated wine addresses — an estate whose dedication to tradition, innovation and sustainable viticulture has made it a reference point for excellence in French winemaking. The decision to create the Nooh collection was not a commercial concession but a genuine extension of the estate's founding conviction: that fine wine should be accessible to everyone, in every moment, regardless of their relationship with alcohol. Nooh Blanc Sparkling is built on 100% Sauvignon Blanc — mechanically harvested, cold pressed at low temperatures to preserve natural freshness, fermented and aged on fine lees in stainless steel to develop depth and volume, then dealcoholised by vacuum distillation at just 35°C to 40°C, a temperature so gentle that the aromas the winemaking has built remain completely and entirely intact. The result is a sparkling wine of intense fruit and herbal character, delicate jasmine florality and the lively, tangy freshness that Provence Sauvignon Blanc always produces when the viticulture is sustainable, the winemaking is precise and the philosophy behind it refuses to accept that quality has anything to do with whether the glass contains alcohol.
