Made from Chardonnay grapes sourced from Galicia, where the Atlantic climate gives the variety a natural freshness and aromatic generosity that warmer growing regions cannot replicate, the wine undergoes Elivo's meticulous gentle de-alcoholisation process — state-of-the-art techniques applied with the single conviction that every captivating aroma and flavour the grape has produced must survive the process completely intact. The result is a bright, straw-yellow wine of exotic fruit character, fragrant herbal and floral notes, and the smooth, silky texture that full-bodied Chardonnay delivers when the winemaking respects what Galicia's vineyards have already given.

Winemaker's Notes

Bright straw yellow in the glass — clean, luminous and immediately inviting. On the nose, a delightful and generous aromatic bouquet: exotic tropical fruit opening first, followed by subtle hints of fragrant herbs and flowers that add natural complexity and a touch of Galician freshness to the overall portrait. On the palate, a pleasant sweetness greets the palate on the attack, giving way to vibrant freshness and an abundance of fruit flavours that move through the mid-palate with lively, silky ease. The texture is smooth and the finish lingers with the quiet satisfaction of a wine that has delivered exactly what it promised. Best enjoyed with appetisers, seafood, fish and white meat. Serve at 10°C. Once opened, consume within 3 days and keep refrigerated.
