Some wines are made by institutions. Vella Lola Blanc is made by a person. David Saavedra spent years working in other people's wineries before taking on the challenge that defines him: building Celler Viniric from the ground up, on the vineyards of Costa Brava, in the D.O. Empordà — one of Spain's most scenically dramatic and gastronomically rich wine regions, where the Tramontane wind shapes the vines and the Mediterranean shapes everything else. His approach is a deliberate and intelligent combination of the traditional and the modern: he monitors the phases of the moon, uses natural fertilisers, and harvests with the patience of someone who understands that the vineyard does the real work. In the winery, cold fermentation and inertisation preserve the natural freshness and aromatic precision of a blend that brings together Muscat, Xarel·lo, Macabeo and Garnacha Blanca — four native varieties whose individual characters converge into a white wine of bright straw colour, high-intensity floral and fruity aromatics, and a palate that is structured, citrus-bright and persistently voluminous. Easy to drink, as the winemaker intended. Remarkable in the glass, as the blend delivers.
