In 2020, Sébastien and Fabien — self-described good Frenchmen — had a crisis of faith about wine. They loved it deeply, in all its history, terroir, nuance and conviviality, and they wanted to enjoy it more freely: without wondering if a lunch glass was reasonable, without counting whether they were driving home, without feeling the need to explain a sober choice at a table full of drinkers. Their response was characteristically French: a revolution. Moderato was founded on the conviction that a wine as good as any other, but without the alcohol, was not only possible but necessary — and that all palates, alcohol or not, are born and remain equal in rights. The Cuvée Originale Le Pétillant is the most immediate and most joyful expression of that conviction: Colombard from the vineyards of Gascony, dealcoholised using the best distillation method their research could find, partnered with the finest winemakers in the region and produced at 12 Kcal per 100ml — because freedom, as Moderato see it, should come with as few consequences as possible.
