Cardio Zero is built around a winemaking philosophy that begins in the vineyard with a deliberate and scientifically considered decision: grapes cultivated under water stress conditions to produce naturally high phenolic content. Phenolics — the compounds responsible for tannin structure, colour depth and the antioxidant properties that give this wine its name — are maximised before a single grape enters the winery. The blend of Mencía, Tempranillo and Garnacha Tintorera is then destemmed and macerated for six days with special enzymes specifically selected to extract the combined phenolics from each variety with exceptional efficiency and precision. After de-alcoholisation using Grupo Élivo's proprietary process — which retains all aromatic and structural components of the wine while removing the ethanol — the result is a non-alcoholic red wine of genuine power, persistence and character that carries both the varietal identity of three of Spain's most characterful grapes and the structural depth that high phenolic content and careful winemaking together can deliver. Once opened, the wine maintains its quality for up to 3 days when refrigerated.
