Albariño and Airén are not an obvious pairing — one from the Atlantic-cooled vineyards of Galicia, the other from the sun-baked plains of Castile — but Elivo, pioneers of non-alcoholic Spanish wine since 2010, understand that the most interesting blends are rarely the predictable ones. The Albariño brings its characteristic floral elegance, citrus brightness and the mineral freshness of the Galician coast; the Airén contributes body, warmth and the ripe fruit generosity of Spain's interior. De-alcoholised through a meticulous process that preserves the aromatic complexity and structural balance of both varieties, the result is a luminous, bright pale yellow wine with greenish glints that opens with mango, melon and elegant florals on the nose — deepening with gentle aeration into ripe fruit and subtle vegetal and smoky nuances — and delivers a structured, elegant and silky palate experience with a sustained finish full of ripe fruit memory.
