Jota de Toro Roble 2018 is crafted by Bodegas Díez Gómez from Tinta de Toro vines between 25 and 80 years old, grown on gravel rich clay and sandy soils with low yields of 4,500 to 5,000 kg per hectare in D.O. Toro, Zamora. Every grape is hand harvested and placed in 20 kg boxes to preserve quality before traditional maceration and fermentation in stainless steel at a maximum of 25°C. The wine then ages for 5 to 8 months in American oak barrels, developing the warm, well integrated toffee and vanilla character that defines the Roble style. The label pays homage to La Jota — the traditional folk dance of Toro, performed at celebrations, weddings and special occasions throughout Castile — a symbol of the cultural heritage that Bodegas Díez Gómez weaves into every aspect of their winemaking identity.
