The vineyards are grown organically, in bush vines that are over 80 years old. The harvest is done by hand, so the best grapes can be selected. The harvest takes place during the third week of September as the Black Grenache is an early-ripening variety. The grapes are kept in a cool temperature for 24 hours and, after the skin contact starts, the grapes are kept cool for some extra hours. Once the desired wine colour is obtained, the fermentation goes on for some days in cold temperature control. After that, the wine stays in the steel tank until it is ready to bottle it. The label displays the face of a young boy, which has a close relationship with the name of this excellent Rosé wine, Mallolet Rosé. In Catalan, Mallolet refers to the youngest member of the household. In this case, this Rosé wine is the youngest wine of the Roig Parals winery, as it is not stored in French Oak barrels.
