Nooh White 0% is the estate's most forward-looking expression of that conviction: 100% Sauvignon Blanc harvested mechanically, gently pressed at low temperature to preserve freshness, fermented and aged on fine lees in stainless steel to build the elegance, texture and depth that the variety deserves, and then vacuum distilled at precisely 35-40°C — a temperature range chosen with care to evaporate the alcohol while leaving the wine's full aromatic character and fine dining credentials completely intact. Floral and vegetal on the nose, green tea and ripe yellow lemon adding a refined complexity that the lees ageing makes possible, white peach and lingering acidity on the palate. The result is not simply an alcohol-free white — it is a sophisticated wine alternative that mirrors the craftsmanship of traditional French winemaking at the level that Château La Coste has always considered the minimum acceptable standard.
