Sylvian Fadat tells the story of his winery with the passion of a man who has spent a lifetime among the rows of vines. We found in Languedoc a passionate but perfectionist Frenchman who carries on the tradition handed down from his ancestors. He remembers his father working the fields as he and his brothers grew up among the rows of vines.
Returning from his studies where he graduated with a degree in Viticulture-Oenology, he dedicated himself 100% to wine production. The beginnings were modest. He remembers having to plant tomatoes, asparagus and peaches at the same time in order to support the vineyards. It wasn't until 1992 that he started growing vines exclusively.
He constantly planted new vines, new varieties, explored new land in the region because, he says, after 10 years of experience, he began to speak the language of the vineyard, to understand what it needed. So he decided to use organic and biodynamic methods in viticulture, and today they are Ecocert and Demeter certified. The results have not stopped coming, with better yields, better quality grapes.
The love for the terroir and its fruits can be seen in every wine produced under the Domaine D'Aupilhac signature. For the magic, as Sylvian calls it, to happen, it is necessary for the wine to rest for 3, 10, 20 years so that afterwards the true story of the wine can be smelled.
