Cranberry Kir Royale

Ingredients
150g fresh cranberries, or frozen cranberries, defrosted light soft brown sugar100ml Crème de Cassis
75cl bottle Cava
Directions:
Step 1
In a small saucepan, combine the cranberries, sugar, and 1 tbsp of Crème de Cassis. Heat gently for approximately 5 minutes until the berries burst and become sticky. Transfer the mixture to a small bowl and allow it to cool completely. This can be prepared in advance and stored in the refrigerator for up to 3 days.
Step 2
Using a small spoon, divide the berry mixture evenly among 6 chilled champagne flutes.
Step 3
Top each flute with the remaining Crème de Cassis. Slowly pour the Cava over the mixture.
Step 4
Gently stir the contents of each flute with a long cocktail spoon before serving. Enjoy!
