Dulce de Invierno 2018 White Wine

The name means Winter Sweet — and the name is earned. Dulce de Invierno begins where most winemakers would stop: with grapes subjected to three distinct concentrating processes before a single litre reaches the barrel. First, freezing — which concentrates the sugars and aromatics by removing water as ice. Then natural drying in a dark environment — which intensifies the dried fruit character and develops the amber tones that give the wine its distinctive visual depth. Then late harvest — which adds the final layer of over-ripeness and complexity that the first two phases have prepared the fruit to express. The variety itself is as singular as the process: a crossing of Verdejo — Rueda's great native white grape — and Gorda de Moldavia, the Muscat variety that brings aromatic richness and sweetness to the blend. After this arduous three-phase gestation, the wine rests for eight months in French oak barrels. The result carries no single vintage because it is, by design, a blend of elaborations from different years — a wine that exists outside the conventional calendar, shaped by winter, patience and the obsessive low-intervention viticulture of Javier Sanz across 104 hectares of Rueda vineyards.
