For those who love the complexity and depth that only the finest sherry can bring to the table, R&G Soleras Olvidadas Amontillado is an amazing and unique choice. This rare and delectable vintage is born from albariza soils, which are heavily influenced by the Atlantic and the Guadalquivir River to produce a slow, quality maturation. It is decanted cold in stainless steel tanks for a period of 24-hours before alcoholic fermentation, which takes 10-days at temperatures between 15-22°C. The wine is then carefully selected for organic breeding and fortified to a maximum of 15.5% ABV.

Once fortified, the wine is then aged in century-old American Oak casks between 500-900L, a process that further continues for the first 12 years under a unique flower veil. After being exposed to oxygen for a couple of decades R&G Soleras Olvidadas Amontillado reaches its full potential with an age of more than 30 years and an alcohol level of 21%, making it a must-have for all serious wine enthusiasts and lovers.
