Elaboration
Chardonnay is not a native Catalan variety — but at Mastinell, it has become the most personal and most celebrated expression in the Cava range, marking the start of every harvest with the excitement of a variety that the winery has learned to handle with complete mastery. The Chapó Reserva Extra Brut is the fullest proof of that mastery: 100% Chardonnay from Mastinell's vineyard, vinified with faithful dedication to quality and aged as a Reserva to develop the balance, creaminess and long fresh aftertaste that has placed this wine on the lists of three Michelin-starred restaurants in the Netherlands alongside celebrated addresses in Barcelona and Valencia. A small, modern winery earning the recognition of the most demanding tables in Europe — not through scale or marketing, but through the careful care of their grapes and the winemaking conviction that every award they have received confirms completely.
Winemaker's Notes
Bright and golden in the glass — luminous and immediately communicating the confident, tropical character of 100% Chardonnay vinified as a Cava with complete elegance and Extra Brut precision. On the nose, fruity and expressive: pineapple, grapefruit and melon in a distinctive aromatic portrait that Chardonnay always delivers when it is grown with care and handled by winemakers who understand exactly what it is capable of. On the palate, balanced, elegant and creamy — a long and fresh aftertaste that carries the variety's natural richness all the way to a deeply satisfying conclusion. Best enjoyed with white fish, grilled seafood, white meat and appetisers. Serve between 6°C and 8°C.
About the Winery
Mastinell is a small, modern winery whose commitment to quality is measured not in size but in the company it keeps — Michelin-starred restaurants in the Netherlands, celebrated wine lists in Barcelona and Valencia, and the numerous awards that careful grape growing and complete winemaking dedication consistently produce. Their Cavas and wines are made with the faithful conviction that excellence in a small winery is not an aspiration but the only acceptable standard, and the Chapó range is the most direct expression of that conviction: a single variety, a single purpose and the unwavering belief that Chardonnay, in the right hands, makes one of the finest Cavas produced anywhere in Spain. At Dis&Dis, Chapó Reserva Extra Brut is the monovarietal Cava we recommend to every customer ready to discover what a Michelin-endorsed sparkling wine tastes like — at a price that makes the discovery entirely and joyfully accessible.
