L'Or du Diable 2018 comes from the A.O.P. Terrasses du Larzac — one of the Languedoc's most celebrated and ambitious appellations, where high altitude limestone terroir produces wines of exceptional freshness, mineral depth and natural structure. This blend of 50% Syrah, 30% Grenache and 20% Carignan undergoes a pre fermentation cold maceration of 4 to 8 days at just 8°C, a deliberate technique that develops colour and aromatic complexity while preserving the natural freshness of the fruit. The wine then ages for 12 months with 20% in barrels and 80% in stainless steel and concrete vats — a carefully considered balance that adds subtle complexity and texture while maintaining the vibrant, pure character that defines this remarkable terroir.
