The Can Figueres farmhouse in Subirats has been at the heart of the Olivé Batllori winemaking tradition since the 17th century — a legacy of accumulated knowledge and estate-rooted conviction that the Penedès region's finest Cava producers carry as both heritage and responsibility. Today, the estate's bottles rest in the silence of a modernist building surrounded by the privileged natural environment of Subirats, ageing with the patience that a Gran Brut Nature Reserva of this ambition demands. Macabeu, Xarel·lo and Parellada provide the classical Catalan foundation; Chardonnay adds aromatic richness and creaminess; Pinot Noir contributes the structural depth and complexity that lifts this blend into a completely different register from the purely native variety expressions of the category. Minimum 15 months of traditional method ageing, zero dosage and a 2015 vintage now carrying ten years of bottle development — the result is a Cava of marked aromatic evolution, good structure and the dry, frank finish that only complete patience and complete conviction produce.
