Pas de Sucre — no sugar. The name of this Cava is its most complete description: at Conde de Valicourt, no expedition liqueur is ever added after disgorgement, making this one of the driest and most honestly produced Cavas available anywhere in Spain. The tiniest winery in Sant Sadurní d'Anoia — the birthplace of Cava — produces just 60,000 bottles of Pas de Sucre, each one hand-numbered individually as the most direct expression of an artisanal tradition that size and commercial pressure have never once been allowed to compromise. The classic blend of Xarel·lo, Macabeo and Parellada is given Gran Reserva ageing that builds the marked fruity character, creamy and toasted nuances and very well-integrated carbonic that the slowly rising rosary of small, delicate bubbles communicates even before the first sip. Dry, elegant, exquisite and round — a Cava that earns every one of those four words with the unhurried conviction of a family that has been making sparkling wine with personality and character in this town for generations.
