Clos del Silenci Negre Selecció 2015 begins before sunrise — harvested by hand at night under the full moon on the Vinyes dels Llims estate at 450 metres altitude, where organic viticulture certified by the CCPAE has been practised for over two decades. The commitment to the land at Can Pere del Maset goes far beyond the organic certification: spontaneous ground cover is maintained to encourage biodiversity and natural water retention in the soil, sexual confusion techniques are used to protect against Lobesia Botrana without pesticides, only organic fertilisers are applied, and the use of copper and sulphur is controlled and minimised to the greatest extent possible. Each variety — Garnacha and Samsó — is vinified separately by gravity, with a cold pre-fermentation maceration at 8 to 10°C for 48 hours specifically designed to extract the maximum aromatic compounds from each variety before fermentation. Light aging in barrels of different wood types and ages, followed by further bottle maturation, completes a winemaking process of exceptional care and integrity. From a family winery established in Font Rubí in 1859, this is a wine of genuine rarity — 1,386 bottles — and genuine conviction.
