Elivo Zero-Zero Deluxe Red is built around a technical achievement that Grupo Élivo has spent years perfecting — a proprietary de-alcoholisation process that combines low-temperature evaporation, aroma recovery using membrane techniques and cryogenisation to remove the ethanol while preserving every other component of the wine with exceptional fidelity. The blend of 60% Tempranillo and 40% Cabernet Sauvignon is de-alcoholised using a low-temperature pressure system that transforms ethanol into vapour at 30°C without damaging the aromatic compounds that make wine worth drinking. Once converted, the wine undergoes partial aging in French oak barrels — a step that adds genuine depth and structure — before bottling with a recommended aging of 3 years from the bottling date. The result is a Galician-produced non-alcoholic wine of real technical distinction and genuine everyday pleasure — a wine that carries the full aromatic and structural character of two of Spain's most celebrated varieties, with none of the alcohol and all of the experience.

Winemaker's Notes

Cherry red with strong purplish hues — vivid and immediately communicating the quality and fruit intensity of Tempranillo and Cabernet Sauvignon preserved through Grupo Élivo's exceptional proprietary process. On the nose, sweet and genuinely fruity with the characteristic aromatic hints of Cabernet that speak of a de-alcoholisation technique sophisticated enough to protect what matters most. On the palate, unctuous and sweet with slightly pronounced tannins that provide gentle structure and a characteristic acidity that keeps the wine light, fresh and genuinely pleasant from first sip to last. A non-alcoholic wine of real everyday accessibility and genuine technical quality from one of Galicia's most innovative and dedicated producers. Best enjoyed with appetisers, meat and cheese. Serve between 14°C and 16°C.
