The talha is Portugal's oldest winemaking vessel — a large clay amphora used in the Alentejo for spontaneous fermentation since Roman times, long before French oak became the global standard. Herdade dos Lagos, farmed by the Zeppenfeld-Kreikenbaum family across 1,000 fully organic hectares in the Vale de Camelos, uses this ancient tradition not as a novelty but as the most honest expression of what their land and their old vines are actually capable of producing. Syrah, Touriga Nacional, Aragonez and Alicante Bouschet — foot-trodden, fermented with indigenous yeasts, left eight months on the madre — then aged in old French oak until bottling. No new wood, no shortcuts, no intervention beyond the patience that this method demands and the organic conviction that this family has lived for four decades. The result is a wine of faded colour, fresh pepper, mineral clay and the kind of fine-tannined freshness that amphora fermentation gives to wines that modern technique simply cannot replicate.
