La Seca is one of Rueda's most storied villages — a name that appears on the finest Verdejo labels in the appellation and carries with it the weight of decades of viticultural history on the Castilian plateau. Javier Sanz has been farming these soils across 104 hectares with low-intervention precision for long enough to know which vineyards give the most and which grapes represent the most personal expression of the land. The Demidulce is built from his oldest vines in La Seca — over 40 years of age, with the root depth and natural concentration that young vineyards simply cannot replicate — and vinified as a semi-sweet white that uses Verdejo's natural aromatic generosity in a completely different register from the dry expressions the appellation is famous for. Sweet grapefruit and pineapple on the nose, anise and fennel adding a herbal freshness that elevates the profile beyond simple sweetness, and a refreshing acidity on the palate that keeps the wine balanced, alive and endlessly easy to return to. Rueda rarely tastes like this. That is precisely the point.
