Demi-Sec is the most misunderstood style in the Cava category — too often dismissed as a sweet afterthought rather than recognised as a winemaking achievement that demands the same quality of fruit, the same precision of fermentation and the same patience of ageing as any Brut Nature. Mascaró's Ambrosía is the correction to that misunderstanding. From the Mas Miquel estate in the privileged Alt Camp region of Tarragona, hand-harvested grapes are transported in small boxes and only the finest free-run juice is extracted — the same meticulous approach Mascaró applies across their entire range. Macabeo, Xarel·lo and Parellada, with a special emphasis on Parellada for its characteristic delicacy and floral freshness, fermented at controlled temperatures and aged a minimum of 15 months in bottle before disgorgement and the addition of 35g/l of refined sugar that brings the wine to its intended balance. The result is a Demi-Sec of genuine elegance, freshness and roundness — Ambrosía in name and, completely, in character.
