Pago E 2015 takes its name from Ermita — hermitage in Spanish — a reference to the ancient spiritual character of Pago Aylés, the first Vino de Pago recognised in Aragón and the first Pago young wine in all of Spain. Established in 2011 across 46 hectares in Mezalocha, Zaragoza, this exceptional estate combines Aragonese-Mudéjar architecture with modern minimal-intervention winemaking. Grapes are harvested at night to preserve their natural freshness and arrive at the bodega within ten minutes of picking — a commitment to quality that begins before the sun rises. The Tempranillo is then aged for 10 months in French oak barrels, developing complexity while retaining the vibrant, aromatic purity that defines this remarkable estate.
