Elaboration

The initial fermentation process happens in stainless steel tanks, where the magic begins. Next, the second fermentation, called malolactic fermentation, takes place in barrels, adding extra depth to the wine's flavors.

To enhance its character, the wine is aged for a total of 16 months in new French oak barrels. These barrels are carefully selected to provide just the right amount of toasty and rich notes. After this stage, the wine undergoes an extended aging period of at least 24 months in the bottle, allowing it to mature and develop its unique personality.

But here's something truly unique: the winemakers take the aging process one step further. The bottled wine is submerged at a depth of 40 meters, where it rests underwater for a full year. This underwater aging adds an extra touch of complexity and mystery to the wine. Following this, it spends another 12 months in the cellar, harmonizing all its flavors and textures.
