Where does this unique product come from? The talented Michel Rolland & Javier Galarreta have carefully selected the best Listán Blanco grapes grown in the renowned Sanlúcar de Barrameda region of Cádiz, sourced from century-old albariza soils that are influenced by the Atlantic and the mouth of the Guadalquivir River. The resulting terroir is perfect for producing a Manzanilla of unparalleled quality.
The grapes are picked in late August and early September, then decanted for 24 hours in stainless steel tanks. The fermentation process happens over 10 days, all with the help of native yeasts. The wines that emerge are then aged for a minimum of six years in American oak barrels (the oldest is from 1822), creating a product that is complex and full of flavor.
Winemaker's Notes
With its beautiful bright straw gold color, this wine has a medium to high aromatic intensity that teases you with notes of flower veil, yeast, brioche, chalk, minerals, and albariza soils. On the palate, this dry Manzanilla wine offers a surprisingly complex flavor with salty and herbaceous notes, and a subtly bitter finish. It's low acidity makes it the perfect choice to accompany salads, cold soups, seafood, or any savory dish.
