How Non-Alcoholic Wines Are Made: Dealcoholization Explained

One of the most common questions we hear is:
“How is non-alcoholic wine made? Isn’t it just grape juice?”
The answer is no. Non-alcoholic wines are crafted in much the same way as traditional wines: grapes are harvested, fermented, and transformed into wine with structure, aroma, and flavour. Only then is the alcohol carefully removed. This process — called dealcoholization — is what allows these wines to taste authentic, elegant, and worth celebrating.
At Dis&Dis, we curate only bottles where craftsmanship and authenticity shine. Here’s a closer look at how non-alcoholic wines are made.
From Vineyard to Fermentation
The journey of a non-alcoholic wine begins in the same way as any fine wine. Grapes are harvested, crushed, and fermented. During fermentation, the natural sugars of the grape are converted into alcohol, creating body, depth, and aromatic complexity.
It is this stage — real fermentation — that distinguishes non-alcoholic wine from grape juice. Where juice is sweet and one-dimensional, wine gains its sophistication through fermentation and ageing.
How Alcohol Is Removed
Once wine has been created, the alcohol is gently removed through advanced techniques. These methods are designed to preserve flavour and aroma while reducing alcohol to 0.0%.
1. Vacuum Distillation
Alcohol evaporates at a low temperature under vacuum, allowing the winemaker to preserve delicate aromas while separating alcohol from the liquid.
2. Spinning Cone Column
The wine passes through a column where centrifugal force separates aroma compounds and alcohol. Aromas are captured, alcohol is removed, and aromas are then returned to the wine. This is one of the most precise methods available.
3. Reverse Osmosis
The wine is passed through fine membranes that filter out alcohol molecules while retaining flavour compounds and water. Once alcohol is removed, the wine is carefully recombined.
0.0% vs 0.5%: What’s the Difference?
-
0.0% wines contain no detectable alcohol (≤0.03% ABV in EU labelling). They are safe for pregnancy, driving, and complete abstinence.
-
≤0.5% wines are sometimes labelled “alcohol-free” in certain markets, but technically count as low-alcohol.
At Dis&Dis, we focus on 0.0% and premium dealcoholized wines, ensuring that every bottle in our collection is inclusive.
