Savoring Ajoblanco - A Sophisticated Spanish Soup

Ingredients
350 grams of almonds. these need to be blanched to remove the skin
650 ml water
30 grams of extra virgin olive oil
10 ml of white wine vinegar
1 peeled garlic segment
Salt
To garnish with some drops of extra virgin olive oil, sliced almonds and some white grapes.
Step 1
Put the almonds in a foodprocessor and add the water, extra virgin olive oil, sherry vinegar, garlic and salt.
Step 2
Set the foodprocessor at high speed and mix until all ingredients are well blended, at least 15 minutes.
Step 3
Remove and pass through a fine sieve.
To garnish add some drops of extra virgin olive and sliced almonds
