La Jota de To, Verdejo sobre lias 2019 White Wine

Elaboration

La Jota de To is a wine with an origin story that no other bottle in the Dis&Dis collection can match. Bodegas Díez Gómez was born from the combination of two passions — Óscar's expertise in winemaking and Laura's deep knowledge of La Jota, the traditional folk dance of the city of Toro, performed at parties, Castilian weddings and special occasions for generations. The label celebrates that dance. The bottle is presented in Burgundy format, aged horizontally before release, with a cocktail recipe printed directly on the label — an invitation to enjoy wine in more ways than one, from a winery that understands that wine and celebration have always belonged together. The Verdejo is sourced from 12 hectares of own vineyard under the Toro Denomination of Origin, under the influence of the Duero River — a limited production of carefully selected grapes, gently pressed, cold macerated, fermented in stainless steel and left on its lees for three months with periodic bâtonnage. The result is a straw yellow wine of genuine varietal character — intense, scented and clean on the nose with tropical fruits, stone fruits, fennel and citrus — and creamy, refreshing and long on the palate with the exotic fruit and herbaceous finish that Toro Verdejo, handled with this level of attention, reliably delivers.
