The History of Lasagna
Lasagna has ancient origins, dating back to the Roman period where it was known as "laganum" – long strips of pasta. Over centuries, this dish evolved to become the layered masterpiece we know today, filled with meat, vegetables, sauces, and topped with a delicious cheese crust.
Ingredients for Traditional Lasagna
For the Ragù (Meat Sauce):
1 carrot, finely chopped
1 onion, finely chopped
100g bacon, diced
300g minced pork
500g minced beef
700g homemade tomato sauce (onion, tomatoes, oil, vinegar, salt, and sugar)
66ml milk
1/2 glass of red wine
Salt and pepper to taste
For the Béchamel Sauce:
1 litre of milk
100g butter
100g flour
Salt and pepper to taste
Final Assembly:
Grated cheese (quantity based on preference)
Fresh or dried lasagna sheets
Step-by-Step Preparation
1. Prepare the Ragù
Start by heating oil in a large pot over medium heat. Add the carrot, onion, and bacon, cooking until softened. Next, add the minced pork and beef. Stir until browned, then pour in the red wine and increase the heat to bring to a boil. Reduce to a simmer and cook for at least 2 hours, adding the milk halfway through to balance the acidity. Season with salt and pepper.
2. Cook the Béchamel Sauce
Warm the milk in a saucepan and set aside. In a separate pan, melt the butter and then stir in the flour to make a roux. Gradually add the warm milk to the roux, continuously stirring to avoid lumps. Simmer for about 15 minutes until thickened. Season with salt and pepper.
3. Assemble the Lasagna
Preheat your oven to 180°C (356°F). Lightly grease your baking dish and start with a layer of ragù. Follow with a lasagna sheet, then a layer of béchamel and a sprinkle of cheese. Repeat the layers until the dish is full, finishing with a generous topping of béchamel and grated cheese.
4. Bake
Bake for at least 30 minutes, or until the top is golden and crispy. For an extra crunchy cheese topping, switch to grill mode for the last few minutes.
