Chicken Piccata Recipe

Ingredients

 

2 skinless, boneless chicken breasts (about 700 grams total)

120 grams all-purpose flour

Kosher salt and freshly ground black pepper

60 milliliters extra-virgin olive oil

85 grams unsalted butter, divided

3 garlic cloves, thinly sliced

80 milliliters dry white wine

180 milliliters chicken stock

60 milliliters fresh lemon juice

1 tablespoon drained capers

Handful of flat-leaf parsley, chopped

 

Instructions

 

Prepare the Chicken

 

Slice each chicken breast in half horizontally.

Place each piece between two sheets of baking paper and pound to an even thickness of 0.5 cm to 0.25 cm using a meat mallet or rolling pin.

 

Dredge and Sauté

 

On a large plate, mix the flour with a pinch of salt and several grinds of black pepper. Dredge the chicken pieces through this seasoned flour.

Heat the olive oil in a large frying pan over medium-high heat. Add two pieces of chicken to the pan and cook until golden brown, about 3 minutes per side. Transfer to a plate and repeat with the remaining chicken pieces.

 

Make the Sauce

 

Reduce the pan heat to low and melt 40 g of butter. Add the garlic and sauté until golden, about 1–2 minutes.

Stir in the wine and reduce by half, about 1–2 minutes. Add the chicken stock and cook until the liquid reduces slightly, about 4 minutes.

 

Add the Finishing Touches

 

Stir in the lemon juice, capers, remaining butter, and parsley. Gently swirl the pan and stir to help the sauce emulsify. Allow the sauce to thicken slightly, about 2 minutes.

 

Combine and Serve

 

Return the chicken to the pan, toss gently to coat with the sauce, and season to taste. Serve warm with the delicious sauce poured over the top.
