Method
1. Preheat your oven to 350°F (175°C). Heat a 10-inch ovenproof non-stick or cast-iron skillet over medium heat. Add the olive oil.
2. Once the oil is hot, add the mushrooms and cook without stirring for 3 minutes to get a beautiful sear. Flip and cook the other side until golden, about 3 minutes more.
3. Stir in shallots and thyme sprigs—sauté until the shallots are translucent (around 3 minutes). Remove the thyme sprigs and season generously with salt and pepper.
4. Meanwhile, whisk together eggs, Gruyère, and chives in a bowl. Season with salt and pepper to taste.
5. Pour the egg mixture over the mushrooms, tilting the pan to distribute evenly. Transfer to the oven and bake until it is just set but slightly wobbly in the centre (15 minutes).
6. For added golden colour, turn on the broiler for 1-2 minutes, keeping an eye on it.
7. Rest for 5 minutes out of the oven. Meanwhile, toss the baby greens with lemon juice, a drizzle of olive oil, and a pinch of salt.
Serve wedges of frittata with a dollop of crème fraîche and baby greens on the side.
