Originating from the historic “Cascos Bodeguero San León, Santa Ana and Miraflores” in Sanlúcar de Barrameda (Cádiz), R&G Xerez Soleras Olvidadas Fino embodies the unique terroir of Jerez. The albariza soils, influenced by the Atlantic and the Guadalquivir river, provide the perfect foundation for the creation of this extraordinary wine. Embracing the slow maturation process and moderate temperatures, the proximity to the sea infuses each sip with unparalleled quality and refinement.

Every step of the vinification process is meticulously executed to ensure the ultimate expression of flavor. The flower must is delicately decanted cold for 24 hours in stainless steel tanks, allowing the true essence of the grapes to shine through. Alcoholic fermentation, initiated using native yeasts, takes place at a temperature range of 15º to 22ºC over a period of 10 days. This careful selection reveals only the most elegant and fine wines, ready to embark on their journey towards organic breeding.

The unique aging process of R&G Xerez Soleras Olvidadas Fino is what truly sets it apart. Through the criaderas and soleras system, the wine matures under a delicate flower veil, showcasing the ancient art of winemaking. Each drop ages gracefully in century-old American oak casks, ranging from 500 to 900 liters, for an average of 8 years. The pièce de résistance, the oldest boot in the Solera Miraflores, dates back to an astounding 1822.
