La Jota de Toro Verdejo Barrica is the older sibling — the same Toro Verdejo, the same 12 hectares under the Duero River's influence, the same label celebrating La Jota folk dance that Óscar and Laura Díez Gómez placed on their bottles as a declaration of where this wine comes from and what it stands for. But where the sobre lías expression preserves the natural freshness and varietal immediacy of Toro Verdejo in stainless steel, the Barrica takes the same grape and asks a different question: what does it become with time, with oak and with patience? The answer begins with careful grape selection, low-temperature maceration and static must filtration — before the wine is transferred to oak barrels for six months, in contact with its fermentation lees, with regular 48-hour bâtonnage that builds the refined texture, broad palate presence and well-integrated wood character that define the finished wine. The result is amber yellow with greenish reflections — a colour that immediately signals the oak aging and the aromatic richness within. White fruits, white apricot, peach and honey on the nose, with bay leaf, hay notes and wood that have found complete integration with the fruit. Broad, refined and authentic on the palate, with a unique finish of Verdejo de Toro character that makes every glass feel like a discovery worth sharing.
