The grape harvest for the 2018 vintage took place in early September. After a brief cold maceration and pressing, the wine was fermented using natural yeasts found on the grape skins. Following fermentation, the wine was aged on its fine lees to enhance its complexity and depth of flavor. It was then clarified with bentonite to stabilize the wine's proteins before being bottled in January 2019.
