Water stress viticulture is not a compromise — it is a deliberate choice. By carefully controlling water availability during the growing season, the vine responds by concentrating its energy into the grape itself, producing fruit of intensified character, deeper mineral expression and the amplified aromatic profile that makes Verdejo from these conditions genuinely more interesting than Verdejo grown in comfort. Grupo Elivo, one of Spain's leading alcohol-free wine producers since 2010, selects Verdejo and Airén grown under precisely these conditions to produce Cardio Zero — fermenting at cool temperatures to preserve and strengthen the natural aromatics, carefully extracting the phenolics that give the wine its structural character, and then removing the alcohol through a cold-process de-alcoholisation that converts it to vapour and leaves a pure, fresh liquid of genuine mineral precision and round, complete palate presence.
