Monkfish with Sizzled Garlic

Serving: 4 servings
8 slices of fresh monkfish
600 g potatoes
5 razor shell
2 cardinal prawns
For the sauce:
8 cloves of peeled garlic
2 large ripe tomatoes
4 slices of bread
parsley (a few leaves)
Farga Milenaria olive oil
Heat Farga Milenaria olive oil in a pan and toast garlic until lightly browned.Fry 4 slices of bread, followed by parsley. Add diced tomato and fry for 1-2 minutes.
Crush toasted and fried ingredients and mix with fish stock in a pot.
Add potato wedges, pepper, salt and monkfish to the mixture, cooking until ready to serve.
Serve on plates with grilled prawns, razor clams and carabineros.
